In an industry where water is fundamental yet often overlooked, we’ve invested in state-of-the-art infrastructure to ensure its efficient use. Our water system, designed to function off the grid, reflects our determination to prioritize quality while minimizing our environmental footprint.
One of the unique aspects of our distillery process is our use of onsite aquifer water, which is refined using a specialized Reverse Osmosis system to purify water for production. This allows us to utilise local Adelaide Hills rainwater, ensuring that it is as clean and pure as possible.
Beyond production, we’ve implemented a comprehensive water management strategy. Wastewater from our distillery is carefully treated and repurposed for irrigation across our orchards and local crops, minimizing waste and maximizing efficiency.
With multiple dams on our property, including a large purpose-built reservoir, we’re able to collect rainwater and stormwater runoff for further use. Through careful programming and treatment, we ensure that this water meets the highest standards before being returned to its intended purpose.
